Chocobo Sage
Talk to Chocobo Sage to learn about chocobos. He's located on the northern continent in between some mountains in a little house. Unfortunately, he suffers from periodic amnesia, so you'll need to return often to get more information. I just went back to the Chocobo Stables and talked to the girl there, and she usually reminded me on what Chocobo Sage had already told me. Then, I went back to his house and he almost always said something new.
Special Chocobos
How to get a Green Chocobo or a Blue Chocobo
To get these chocobos, you need to breed a yellow great chocobo and a yellow okay chocobo with a Carob Nut. They , of course, need to be of opposite sex. You will get either a Blue Chocobo or a Green Chocobo.
How to get a Black Chocobo
To get a Black Chocobo you need to feed a Blue and Green Chocobo (opposite sex) and feed them tons of greens. Race them at the Gold Saucer and get them to A or S-rank. Then, breed them with a Carob Nut. You should get a Black Chocobo, if not, let 'em rest and try again.
How to get a Gold Chocobo
To get the Gold Chocobo, you need to breed a Black Chocobo with Yellow Chocobo using the Zeio Nut which is found on Goblin Island in the north eastern part of the world map. The yellow chocobo needs to be of opposite sex of the Black Chocobo and must be in A or S-rank.
+You can also get a Gold Chocobo by defeating Ruby Weapon and trading the Desert Rose you aqquire for a Gold Chocobo from the Kalm Traveler.
